Enchilada Night!
We love Mexican food and so we love enchiladas! This is our family enchilada recipe - the key ingredient is to fry the tortillas - yum! You can vary the type of meat too - I often will make a roast and use the leftover meat in the enchiladas! Enjoy!
Ingredients:
- corn tortillas (white or yellow)
- 2 cans or 2 packages of enchilada sauce
- onion, chopped
- canola oil
- 1 pound of cheddar cheese
- 0.75-1 pound of meat - I used two chicken breasts for this recipe but you can substitute any meat!
These are our preferred brands - we make a "Christmas" enchiladas with green and red sauces
Instructions:
Preheat the oven to 350 degrees
Sauté the chicken and onion in a frying pan. Add a little oil if needed.
Shred the cheese.
Next - fry the tortillas by putting about a half an inch of oil into a frying pan and heating it until its hot but not smoking. When you are able to add a tortilla and it sizzles - then it's ready! Fry all the tortillas (usually 12 in a package) for about 10 seconds each so that they are still a little soft.
Then, take each tortilla and add cheese and the meat mixture to it. Then roll it up and add it to your pan.
Last - pour over the sauce and top with the remaining cheese!
Pop in the oven for about 30 minutes - the sauce will be bubbling and the cheese will be melted! Enjoy!
